I don’t know what it is this year that seems so much busier but man oh man!!!!! Three boys in high school, 2 playing football, one in band, throw in a foot in a boot for a sprained tendon and one with a concussion and I’m surprised I’m still sane…..and it’s just started. BUT!!!!! There are just some things I can’t control, just life. In all the chaos though, there is one thing I can control a little more and that is yummy lunches, snacks and breakfast, and oh yea……germ control! On Fridays it’s our tradition for me to bring a hot lunch to them at school since they are closed campus, but every other day of the week I do my best to make sure they have a good breakfast and a yummy after school snack. Yesterday was no exception and I wanted to do something different than just plain ol’ muffins! So I added a couple of my favorite ingredients……cream cheese and cinnamon toast crunch cereal!
These were so easy to make and the kids loved them. I barely had time to snap any photos because when I turned my back they were nearly gone. They’re very quick and easy to make and perfect if you have kids who are out the door in a hurry on school mornings. That also means they aren’t going to be washing their hands, so I always make sure to set out some wet ones, because they can grab them and use them on the way to school.
Cream Filled Apple Cinnamon Toast Crunch Muffins
- 2 Packages Apple Cinnamon Muffin Mix (Martha White is what I used)
- 1 box 8oz Cream Cheese
- 1/4 c. Sugar
- 1tbsp cinnamon
- Cinnamon Toast Crunch pieces
- Prepare the muffin mix as instructed
- In a small bowl, mix sugar and cinnamon with cream cheese
- Pour muffin mix into muffin pan
- Drop a large spoonful of cream cheese mixture into the center of each muffin
- Sprinkle Cinnamon Toast Crunch pieces on top of each muffin
- Bake at 350 for 20 minutes
- Remove and cool.
