Red Velvet Cream Cheese (cake box) Cookies for Santa

Red Velvet Cake Box Cookies with White Chocolate ChipsI can NOT believe it’s already fixing to be Christmas ya’ll.  Seems like every year just flies by quicker than the last, and I don’t know about you, but this has been one of the most difficult years I’ve had.  I personally am ready for it to be over and for the new one to start.  But first……Santa’s coming!  As hard as I try to convince my daughter each year that Santa really prefers hot wings over cookies and milk, she doesn’t believe me. So this year, it’s cookies again.  This year she is on a red velvet thing for some reason, but at least she has good taste right?  She wanted to make red velvet cookies this year for Santa. 

I’m not even going to sit here and pretend that I can make anything red velvet from scratch, so I’ll just go right ahead and tell you, I made these with cake box batter, which of course is a lot easier……and if you check out my other recipes, you know I like easy…..I like it a lot.  Of course I’ve added a couple of my favorite ingredients to these including cream cheese and coconut oil.  Once you start baking with coconut oil you won’t go back, I promise. Red Velvet Cake Box Cookies

I love my cookies soft and a little chewy and that’s exactly how these turned out.  I think it’s the first time I’ve used my Rachel Ray baking sheet I’m ashamed to say.  I’ve had the cookware set for several months and love the pots and pans included, and the cookie sheet was no disappointment either.  So this year Santa will be indulging in these super soft and chewy, rich Red Velvet Cream Cheese Cookies (with white chocolate).  Maybe next year on the hot wings, just maybe!Red Velvet Cake Box Cookies

Red Velvet Cream Cheese Cookies with White Chocolate Chips

This is a very easy cookie recipe since the base is cake box batter. Add a few of my favorite ingredients and you have yourself a yummy, super soft, chewy cookie!

Ingredients
  1. 1 Box of Red Velvet Cake Mix
  2. 2 Eggs
  3. 1 8oz package cream cheese (very soft)
  4. 1/2 cup coconut oil (melted)
  5. 3/4 c brown sugar not packed
  6. 3/4 pack white chocolate chips (or use the whole bag, it's your right)
  7. 1 tsp vanilla
  8. 1 tsp baking powder
Instructions
  1. Preheat your oven to 350
  2. In a mixer, combine all ingredients EXCEPT white chocolate chips and mix
  3. Pour in white chocolate chips and stir them in with a wooden or plastic spoon
  4. Place drops of dough onto a prepared or non-stick cookie sheet
  5. Bake for approx 10 minutes while the cookies are still soft bur semi set and cool
